Main Dish Monday: Taco Time

Hey y’all!!  We’ve had a super crazy weekend!!  So my Main Dish Monday will be a repeat.  Tacos are a HUGE family favorite around these parts!!

It’s Friday night and it’s Taco time here at the Sewell house.  I don’t know about y’all but we go through meal time phases.  We love Mexican food here.  Nachos were the big weekend favorite for years.  I was in charge of making the cheese sauce (which is DELICIOUS by the way) and Keith would always handle the meat and assembly.  But y’all we have eaten so many nachos that we are just burnt out on’em.  So tacos are the new favorite.  I like that it’s no where near as messy as nachos were.  I only have to wash just one pan and my food processor.  Why a food processor??  Please don’t tell my children, but I add at least one grated zucchini and one grated carrot to my taco meat.

I like to know that everybody is getting some veggies.  Plus it’s just a good way to use up the fresh produce that I always have on hand.  It also stretches a pound of ground beef a touch farther.  If you’ve had my Mexican Lasagna from Hope Cooks you’ve had zucchini and carrots as well.  Sneaking in veggies just makes me feel like a good mom.  😉

Along with the veggies I add salt and pepper of course, chili powder, garlic powder and onion powder.  You could absolutely use fresh garlic and onion but tonight I went for the ease of the bottle.  I never buy packet mixes….who knows what you’re getting in those little envelopes.  Plus your own just always tastes better….trust me!!

Sweet times
Tacos are a huge hit with everybody here.  They’re tasty, filling and very economical.  Publix almost always has some brand of taco shells on sale or BOGO.  This is how we like ours.
I can never decide between soft and crunchy so I always do one of each.  Ruthie and I also fill ours with whatever lettuce we have on hand which is normally spinach but tonight I had a spring mix….another way to get some fresh veggies.
This is always a good thing to see!!  Tacos are one of the few meals that I can make and hear no complaints!  I’m curious to know what your family favorite meals are.

aren’t you clever? We have tacos every Friday night too, but I need to sneak some vegetables into my meat. Thanks for the tip!
