I hope you had a fabulous weekend!! We pretty much stayed around home on Saturday, which was extremely nice!! We enjoyed worshiping our King together as a family on Sunday. I hope you did as well.

I have an interesting recipe to share with you today. I found it on Pinterest, which is pretty much where everything is found these days. What a great resource it is!! It’s definitely made my life a little easier.
We LOVE pepperoni and we LOVE cheese so this recipe for Pepperoni Pizza Casserole looked so GOOD!!
Here’s what you need:1 pkg of ppperoni, 2 cups of mozzarella shredded, 1 1/2 pounds of ground beef, a large jar of pasta sauce (I used my own), and one bag of noodles. I used gluten free spirals but penne, egg noodles, any kind of pasta would work. I would also have some garlic, onion and Italian seasoning on hand for more flavor.
Prepare your pasta according to the package directions. Make sure you salt the water! Brown the ground beef adding salt, pepper, onion, garlic and Italian seasonings. You could use fresh or dried
Put a thin layer of sauce in the bottom of a 9 x 13 baking dish. You can see I was going for easy clean up on this night.
Top with pepperoni, cover and bake at 350 degrees for about 30 minutes.
Remove foil and bake for another 15.
Let it rest for 10 to 15 minutes before serving.Oh it looks so yummy!! It’ll be a crowd favorite.
Pepperoni Pizza Casserole
1 1/2 pounds ground beef
1/2 medium onion, diced
2 cloves of garlic, minced
1 1/2 teaspoons Italian seasoning
salt and pepper to taste
1 package of your choice of pasta
3 cups shredded Mozzarella
3 cups of your favorite pasta sauce
1 package of pepperoni
Prepare pasta according to package directions. Brown beef with onion, garlic and seasonings.
Cover the bottom of a 9 x 13 pan with a thin layer of sauce. Layer half the pasta, half the meat, half the sauce. Then the rest of the noodles, half the cheese. Add the rest of the meat and sauce. Sprinkle the remaining cheese on top. Top with pepperoni.
Cover and bake at 350 degrees for 30 minutes. Remove foil and bake and additional 15 minutes. Allow to rest for 10-15 minutes before serving.
