Main Dish Monday: Creamy Tomato Soup

Hey y’all!!

We have been CRAZY busy lately!!  I’m sorry I don’t have a Main Dish for you today.  With everything we’ve had going on lately, I haven’t done a lot of cooking.  I do have an AWESOME dessert that I hope to share with you later in the week.  It’s SO SO easy and even more delicious!!
I hope you are enjoying “the most wonderful time of the year”!!  Don’t let the busyness get you too overwhelmed to remember why we celebrate.

Monterrey Chicken This is probably the most viewed recipe.  It’s definitely a FAVORITE!!

Here is a new recipe that I don’t really count as a MAIN DISH but more like a quick and easy lunch.  In my house, It’s not a main dish unless it has MEAT!!  😉
Here’s my take on a quick and easy Tomato Soup.

Start with one 8 oz can of tomato sauce, 1 tablespoon of butter, 1/4 tsp of onion powder, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of oregano, and one cup of milk.Combine all ingredients EXCEPT milk in a saucepan.  Bring to a simmer.Gradually stir in the milk.Cook and stir until heated through but do not bring it to a boil.
Season with salt an pepper.
I love to top mine with Parmesan cheese.Serve this alongside a grilled cheese sandwich and it just doesn’t get much better!!

Creamy Tomato Soup

8 oz can tomato sauce
1 tbs butter
1/ tsp each garlic powder, onion powder and oregano
1 c. milk

Combine all ingredients except milk in a saucepan.  Bring to a simmer.  Slowly stir in milk.  Cook and stir until heated through but not boiling.  Season with salt and pepper.  Serves one or two.

YUM! I love Tomato soup and I’m ready for it to cool back off, so I can have a bowl with a grilled cheese for lunch. Thanks for sharing.
