It’s Pumpkin Time!!

It’s the first week in October!!  It’s pumpkin time!

I LOVE ALL things pumpkin from pumpkin patches to pumpkin yummies.  This recipe is one of my favorite simple pumpkin goodies and it’s gentle on on your waistline too!!  I’ve seen it around for a while now and decided to give it a try.
2 ingredients: 1 can of pumpkin and 1 boxed cake mix
Mini muffins are the perfect size for us.Put the can of pumpkin and he cake mix in a bowl…and stir them together.  You don’t even need a mixer.You can really add in anything…use any variety of cake mix…get creative!This was my first time making these muffins so I did some little experiments.  I left some plain and topped some with cinnamon and sugar…Once all my mini muffin cups were filled, I still had some batter left.  So I added chocolate chips to the left overs…..I just couldn’t resist adding in some chocolate.  It’s an addiction!!I used a regular muffin tin for these.Bake them at 350 for 15-20 minutes.  While they were baking, I mixed up some confectioner’s sugar, pumpkin pie spice, and a little milk to make a simple glaze.They were delicious.  I really liked the plain ones the best though.

But the pumpkin chocolate chip muffins were DELICIOUS as well!!

Add a pumpkin spice latte or a cup of milk and enjoy!  This is just the thing to get you into the feeling of fall.


Simple Pumpkin Muffins
1 can of pure of pumpkin puree
1 boxed cake mix (any variety)

Options for add-ins: Cinnamon, Pumpkin Pie Spice, Chocolate chips, anything goes

Combine pumpkin puree and cake mix.  Add in anything you wish.  Scoop batter into lined muffin tins.  Bake at 350 degrees for 15-20 minutes.
