Whew!! I know I have been a little MIA in the blog world this week. I have missed it so much. We started back to school so my time is a little more limited. However, I wanted to pop in for just a moment today and share a FUN little recipe that we have done recently.
It’s no secret that I L.O.V.E. chocolate. I eat it in really any available form!! But I will say that truffles are a favorite of mine. I just like the sound of the name and the term “chocolate truffle” sounds so decadent and FABULOUS to me. In fact, I enjoy them so much that I have asked my husband to never buy me another box!! I’ll literally indulge and eat the whole lot of them in one sitting. I know I’m not the only chocoholic out there am I??
It is unfortunate that I have passed on my love for chocolate to ALL 3 of my children. They are almost as bad about it as I am…..almost. I’m trying to break the cycle here. 😉 But we had a LOT of fun making
these very easy chocolate truffles together.I found this recipe in a craft magazine forever ago and set it aside in my “food inspiration” notebook 😉 and came across it recently. It’s oh so simple!!
Here’s what you need: One 8oz block of cream cheese, softened and 20 oz. of semi-sweet chocolate chips.
Beat your cream cheese in a mixer.Melt 1 cup of the chocolate chips in a double boiler. This is how I do it.Then stir the melted chocolate into the cream cheese.Put this in the fridge until firm. You know….30 minutes to an hour or so. Not rocket science here.
Once it’s firm, shape the cream cheese and chocolate mixture into balls. I used my small cookie scoop and got about 36. Place them on a cookie sheet covered with wax paper.Melt 2 more cups of chocolate for the dipping!! This right here is a HUGE weakness!!!Not only is it MY weakness…..but it’s hers too. And hers too….Bless her heart she was asking for a lick and thought she was just going to DIE before she got one!!
Use a fork to dip them into the melted chocolate and add your choice of sprinkles or decor. We rolled some in cocoa powder instead of dipping them in the chocolate which I loved!! But my little once weren’t so keen on the strong chocolate taste.
Super Easy Chocolate Truffles
1 8 ounce block of cream cheese, softened
20 ounces semi sweet chocolate chips
Melt 1 c. of chocolate chips over a double boiler.
Beat cream cheese until fluffy.
Stir in melted chocolate.
Refrigerate until firm.
Shape into balls.
Melt remaining chocolate. Use a fork to dip the truffles and decorate as you wish. Refrigerate for an hour. Store any leftovers in refrigerator.
Yields: approximately 3 doz.
