Chocolate Chip Cookie Pie

Well we are in the FINAL Christmas countdown.  Have you got all of your shopping done??  I still have a few little things that seem to drag on forever!!  But I’m slowly but surely marking things off the list.

Ok…this pie MUST make it to your Christmas celebrations!!!
It really is one of the BEST things that I have ever tasted.  It’s rich but NOT too rich.  The texture is perfect!!
It’s just GREAT!!

Not only does it taste delicious but it’s SUPER easy to make too!!  Like…really easy!!

Here’s what you need: 1 pie crust, 2 eggs, 1 1/2 sticks of butter, flour, white sugar, and brown sugar, and CHOCOLATE!!

If you do a lot of baking, you’ll recognize that this recipe is sort of backwards in the way you put it together.  You start by beating the eggs.  On HIGH!!  😉 Until they are foamy….whatever that means.  Then you add 1/2 cup EACH of all-purpose flour, brown sugar and granulated white sugar.Once you’ve added the dry ingredients, beat in the butter.  SEE, it’s backwards!! Add in the chocolate.  I used mini semi-sweet.  Which I love because with the minis it seems like you get more chocolate and I LOVE chocolate!!  And apparently, I LOVE to use the word LOVE too!!

Spoon the “dough” into your pie crust.And bake at 325 degrees for 55-60 minutes.
I normally go the full 60.  Just watch for browning.  You may have to rotate it in your oven so that it browns evenly on top.

And it really is that easy!!
Serve it warm or at room temp.  Add ice cream or whipped cream…or not.
I didn’t get a picture of this sliced because I had a house full of people at that point.  But if you try this recipe, and I hope you do, you’ll see how yummy it looks.  Whenever I pull this out for my guests it always brings a smile to their faces, which I LOVE!!
Also, since pie crusts normally come in twos, make an extra for a friend or neighbor!!  Wrap this baby in some cellophane, add a pretty ribbon and you’ve got a gift that’ll be hard to resist!!
(If you wrap in cellophane, be sure that it’s completely cooled.  Nobody likes condensation!!)

Chocolate Chip Cookie Pie
This recipe is from Nestle

1 unbaked 9-inch pie crust
2 eggs
1/2 cup white granulated sugar
1/2 cup packed brown sugar
1/2 cup flour
1 1/2 sticks unsalted butter, softened
1 cup semi-sweet chocolate chips
1 cup pecans or walnuts (optional)

Preheat oven to 325 degrees F.
Beat eggs in a large mixer bowl on high speed until foamy.  Beat in flour, and both sugars.  Beat in butter.  Stir in chocolate chips and nuts (if using).
Spoon into pie shell and bake for 55-60 minutes.  Serve warm or at room temperature.  Top with ice cream or whipped cream if your heart desires!!
